Oh boy! We’re switching things up here on Xo, Kate Day this week. In an attempt to focus on the lifestyle aspect of my blog I’m talking about my favorite meal to make at the moment, smoothie bowls!! Anyone who know me knows that even as obsessed as I am with The Food Network, I am by no means a foodie. Also, anyone who knows my mother knows that I definitely didn’t inherit any talent in the kitchen (kidding!! She’s actually a much better cook than she likes to let on).
The thought of talking about cooking on the blog had never really occurred to me until my blog bff, Kenzie, and I were talking about our love/obsession with making smoothie bowls during one of our weekly shoots. For anyone who doesn’t know, a smoothie bowl is basically just what it sounds like. It’s a thicker than normal smoothie poured into a bowl and piled high with lots of yummy toppings. Super filling. Super easy. Super yummy. And super healthy. Not to mention the smoothies end up being beautiful colors and you can get creative with arranging the toppings making for some Instagram gold.
First we whipped up a batch of my favorite ever granola. I found this recipe for banana bread granola a few years ago on pinterest and it’s honestly life changing. Its super quick and easy and absolutely delicious. I swap the nuts and flaxseed for chia seeds, hemp seeds, pumpkin seeds, and coconut flakes and IT’S SO GOOD!!!! Once the granola was cooling, we moved on to the smoothie bowls themselves.
For Kenzie’s bowl all we used was a frozen acai packet, a banana, and a splash of milk. For mine, we used a large handful of frozen peaches, a large handful of frozen raspberries, a banana, and a splash of milk. We poured all the ingredients into a blender and blended until the mixture was smooth and there were no visible chunks of fruit but we were carful not to over blend so the smoothies didn’t get too liquidy (the thicker the smoothie the better it can support all the delicious toppings).
We both chose the same topping for our bowls; the banana bread granola, bananas, raspberries, strawberries, coconut flakes and chia seeds. Kenzie arranged her toppings in a super cute starburst pattern while I stuck to my classic linear smoothie bowl aesthetic (cringing at myself for saying that).
And that was it, the perfect meal for a summer morning!
